This is my go to vegan waffle recipe I make almost every weekend and I batch cook them, so we have plenty leftovers for the week! You can adjust the ingredients to change up the flavor or load it with your favorite toppings! Don't like waffles, well then make pancakes instead. They are kid approved, perfect for breakfast or on the go as a snack and freeze really well! Ready? Let's go!
Well, store bought waffle or pancake mixes are vegan, but they can often be high in added sugar, sodium and other additives. This recipe is made with simple, whole food ingredients that you probably already have in your pantry. Home cooking has been shown to be not only healthier, but also more affordable than eating out or buying pre-made vegan breakfast foods.

Rolled oats are SO versatile with many nutritional benefits that I get excited to talk about them. They are a good source of fiber, vitamin B1, and minerals such as manganese, phosphorus, magnesium and zinc. Oats are also high in antioxidants and have anti-inflammatory properties which can help protect cells from damage.
Per the USDA, 1 cup of rolled oats provides almost 8 grams of fiber, 5 grams of protein without any added sugar, sodium or cholesterol!
Whole grains, such as oats, have also been
shown to be beneficial in reducing the risk of heart disease, diabetes, obesity and great for your gut microbiome.

Well, oats are a high-quality, vegan source of protein and fiber which can help keep you feeling full and satisfied after eating. They also add a nice flavor and texture to the waffles. Be sure to use old-fashioned or rolled oats, not quick oats, in this recipe as they will cook more evenly.

The best part of this vegan waffle recipe is you can change up the flavors or toppings depending on what you are feeling that day. You can also add your favorite protein powder if desired. Our favorite toppings:
Berries, bananas, other fruit, seeds (hemp, flax, pumpkin), nuts or nut butter, & coconut flakes just to name a few!
My French-Canadian husband of course loves maple syrup on his! And my kiddos love dessert waffles with homemade ice cream and Enjoy Life mini chocolate chips (they are vegan!)
Equipment
I would recommend using a powerful blender like the Vitamix A3500 Ascent Series Blender (My favourite!) to make the batter smooth and to help create those perfect waffle pockets.
If you don't have a waffle maker, no problem! Just use a pancake griddle and cook until golden brown on each side.
Prevent sticking
I recommend spraying a little bit of oil on your waffle iron or girdle to prevent the waffles from sticking.

What You Need:
3 cups organic rolled oats
2 medium bananas
1/2 tsp cinnamon
1/2 tsp baking powder
1-2 tbsps maple syrup
splash of apple cider vinegar (1/2 cap)
pinch of salt
2 cups plant-based milk
